Have you had tried the Green Tea Mojitos yet? If you did, you know how stupidly simple mocktails can be, and truthfully, a good cocktail shouldn’t be a far shot off from that level of simplicity either.

One trick that makes mocktails seem more sophisticated, is what they look like. So, for this easy-to-make cranberry peach bellini-spritzer, I’m giving it a sugar rim.

Peach bellinis are a summer staple—they’re light and refreshing, and easy to love. It’s BFFs with the mimosa and vodka soda.

A true spritzer would be presented to you in a champagne flute, but since this is non-alcoholic, and relatively low-calorie thanks to the soda water, I’m using rocks glasses. (If you choose to add champagne or prosecco, by all means use a flute so that you limit your alcohol intake.)

Since adding the sugar rim was the most “complicated” part of making this, I’ll explain how to do it if you’re unfamiliar:

First- you’ll want to use some sort of specialty sugar. I used rose sugar and hibiscus sugar, both from a boutique nursery in Orem, UT called Sun River Gardens. If you’re in a pinch, you can take a few dried berries (strawberries or raspberries work best), and a few tablespoons of sugar, and run them through your blender to get a basic flavored sugar.


Next, you’re going to wet your rim with a wedge of lemon, lime, orange, or whatever you have, and then touch that edge into your sugar.

BAM! You did it! Sugar rim = Easy Peasy.

The rest of the recipe follows, and I’ll add that you might be surprised by how sour this cranberry bellini is. Don’t go overboard on the sugar, but do be generous!

To garnish, go for whatever you feel! I have yet to find a garnish that doesn’t work well!
